Recipe: Tomato and Fresh Mozzarella Bruschetta
Yield: 4 servings
¼ ounce red onion, demi julienne
¼ ounce fresh basil, chiffonade
8 cherry tomatoes, halved
4 ounces fresh mozzarella (Ciliegine), halved
½ teaspoon finely minced garlic
1 teaspoon extra virgin olive oil
Sea salt to taste
Fresh cracked black pepper to taste
6 slices of ciabatta, toasted or grilled
Procedure:
1. In a small mixing bowl, gently fold together the red onion, basil, tomatoes, mozzarella, garlic and olive oil. Season to taste with sea salt and fresh cracked black pepper.
2. Spoon and equal amount of the tomato and mozzarella mixture onto each piece of toasted or grilled ciabatta and serve immediately.
