Recipe: Asian Shrimp Jar Salad
1-2 tablespoons chopped kimchi with juice
1 handful of chopped raw carrot
3 sliced radishes
1/2 sweet red pepper
6-7 cooked shrimp (I buy raw, season it with five spice powder and sauté it in a non stick pan)
6 or 7 slices of pickled cucumber (thinly slice, and toss with 3-4 tablespoons rice wine vinegar, 1 teaspoon sugar and red pepper flakes)
2 tablespoons marinated mushrooms (thinly slice and sauté mushrooms, and deglaze with 2 teaspoons of rice wine vinegar and a splash of soy)
As many handfuls of greens you can fit in and still shut the lid
Get all of the ingredients together, and assemble the salad in the jar, starting with the kimchi and moving up to the greens. Really, it’s that simple.
