Hear. Hear, Elephant ears

Dear Heloise: Several years ago, you printed a recipe for Heloise’S elephant ears in our paper, The Bakersfield Californian, using refrigerated biscuits. This was such a hit at our family reunion! However, I have lost the recipe and would appreciate it if you would print it again. — Jan B., Bakersfield, Calif.

This is a favorite reader and family recipe, and one that is easy to make, plus absolutely delicious! You will need:

1/2 cup cinnamon

1 cup white sugar

1 can cinnamon buns (found in the dairy case)

First, preheat your oven to 375 F. Mix the cinnamon and sugar together and pour it into a 9-by-13-inch cake pan (to keep it contained, because it can make a big mess). Take one bun and put it into the cake pan, and use a rolling pin to roll each bun. Turn often so the dough absorbs lots of the sugar and cinnamon. Place the coated buns on a FOIL-LINED cookie sheet, and put it into the oven. Bake on the center rack. Check often so they don’t burn or overbake (which they can do since they are very thin). BREAD HINT

Dear Heloise: When there is a heat wave, baking seems less appealing. Instead of baking breads (in loaves) such as banana bread, which takes an hour to bake, I have a hint. I make muffins from the same recipe instead because they take about one-third of the time in the oven. They are convenient, fast and still delicious. — Margarette M., Temple, Texas

FRESH HERBS

Dear Heloise: I use fresh herbs in cooking and salads, especially chives, but often don’t use them before they go bad. Now I wash, cut to size, lay out on a layer of paper towels and cover with another layer until they are completely moisture-free. When dry, store them in plastic containers in the freezer. They don’t stick together, and it is easy to spoon out the amount needed. — M. Hill, San Clemente, Calif.

PLASTIC EGG CONTAINERS

Dear Heloise: Having seen in your column a reference regarding the three-fold, clear plastic egg containers, I thought I would let you know what I did with them.

I love earrings but could never locate a set while rummaging through the jewelry box. I separated the containers and used each egg section for a pair of earrings. I could stack them in a drawer and could see through to find a pair. — June Kreutzer, Toms River, N.J.

‘GRATE’ BUTTER

Dear Heloise: I started cooking using real butter instead of margarine. The butter was difficult to spread. I tried melting it to make it easier, but it still seemed like too much effort. I started using a hand-held grater, and it works wonderfully. I grate the butter over a variety of different foods: bread, corn on the cob, baked potatoes, etc. — Jackie T. in North Carolina
