Meat and Rice Balls with Sauerkraut (Porcupine Balls)
Ingredients:
1 lb 85% ground beef
1 cup Uncle Ben’s Long Grain rice (uncooked)
Spices to taste: parsley flakes, garlic powder, salt, pepper
6 oz can of tomato paste
27 oz can of Snow Floss Sauerkraut (drained well)
Instructions:
1. In a large bowl mix together ground beef, rice, spices, 2/3 can of tomato paste.
2. Form mixture into about 8 large meatballs.
3. Place large meatballs in circles touching side by side in large deep skillet.
4. Spread drained sauerkraut across the top of the meatballs.
5. Spread remaining 1/3 can of tomato paste across the sauerkraut.
6. Add cold water to the skillet so that it covers the top of the sauerkraut.
7. Cover skillet with a lid.
8. On top of the stove heat the mixture on high until it comes to a boil.
9. Reduce the heat and let simmer for 1 hour.
10. Check often to see if more water is needed so as not to burn. Heat cold water in the microwave and add to mixture as needed.
